If you are looking for something beautiful and easy - we've got you covered, this delicious Baked Potatoes Carousel is wonderful and eye-catching. It has everything you want in a dish, they are crispy on top and soft in the bottom, full of sweet and salty flavours and they are very easy to make. There's one condition on that easiness though, you need a mandoline cutter, that is if you don't want to spend 2 hours cutting potatoes.
2 tbsp. Olive Oil
2 tbsp. Butter
1 Sweet Onion, thinly sliced
Garlic Clove, thinly sliced
6-8 Medium Size Potatoes
1/2 cup Chicken Broth
1 tsp. Thyme
Sea Salt and Pepper to taste
Heat an oven-safe and non-stick skillet to low-medium on the stove and melt butter and oil.
Add the onion and garlic and cook stirring frequently, they should cook slowly so they caramelize.
While the onions are cooking, cut the potatoes with the help of a mandoline cutter, trying to keep them as organized in bunches as possible.
Preheat the oven to 200ºC.
Once the onions are caramelized, remove from heat. Arrange the potatoes on top of them trying to keep them in bunches.
Add the chicken broth, thyme, sea salt and pepper.
Bake for 35-45 min or until crispy on top.
