Coconut rice

Let's be honest: we tend to get bored of plain rice! That's why we bring you this amazing variation directly from the Caribbean - it's consumed mainly in Colombia - that will help you add a sweet and original touch to your everyday meals. Try this amazing coconut rice and let us know what do you think!


1 cup Brown Rice

2 tbsp. Coconut, shredded

1 tbsp. Coconut oil

1 tbsp. Stevia (or brown sugar)


Directions: 1. Heat a pot to medium-high and add the coconut oil, shredded coconut and Stevia - cook for some minutos or until it's golden brown.

2. Add the brown rice and mix well.

3. Add 2 cups of water and bring to a boil. Lower heat and cook covered for 15-20 minutes or until water has completely evaporated.
