Dill and butter trout loins

4 Trout loins, with the skin

2 tsp. Butter


Red Pepper, crushed

Sea salt


1. Heat a skillet to very high heat and place the trouts on the skin side - cook them covered for 10-12 minutes, or until they are pale pink (you don't need to flip them, the skin will protect them and they will be juicy and delicious).

2. Serve with a little butter, dill, red pepper and sea salt.
